Apple Pie Baked Breakfast Cookies aka “Heaven on Earth”

The perfect grab-and-go breakfast or even a sweet treat right after dinner? Lucky for you I have the answer: Apple Pie Baked Breakfast Cookies. 

Because who doesn’t want to eat slice of apple pie for breakfast or dessert?

Well, lucky for us celiacs and those with gluten-allergies, you can do just that, and it’s socially acceptable.

So here’s the scoop:

You will need the following ingredients to prepare this glorious apple baked goody.

  • 1 cup of gluten free quick oats (Trader Joes and Quaker have a great selection)
  • ¼ cup of ground flax seed
  • ½ tsp of salt
  • ½ tsp of cinnamon
  • ¼ tsp of nutmeg
  • ¼ tsp of cloves
  • 2 eggs
  • ½ cup of unsweetened applesauce
  • 1/3 cup of coconut sugar (or unprocessed cane sugar if you’re looking to keep it “clean” otherwise a splenda or real sugar will work just as well)
  • ¼ cup of coconut oil
  • 1 cup of diced apple
  • ½ cup of toasted walnuts
  • ½ cup of raisins

Got that? Good. Now let’s get cooking…

First order of business, as expected, pre-heat that oven of yours to 350 F. Then you can dive into the actual labor.

(First – once the oven is hot, I’d toast the walnuts. Give them 5-10 minutes in the oven for an even better flavor and let them cool for a bit – but it’s not essential. Also, too, if you’re nut-free this recipe doesn’t even need those guys to begin with.)

Take a large mixing bowl and stir together your gluten free rolled oats, the flax seed, salt and spices until it’s evenly distributed.

Meanwhile, in a smaller bowl, also whisk up your eggs, applesauce, sugar of choice, and coconut oil. Once that’s mixed up, pour this mixture into the oats you just stirred up.

From here, you’ll add in your apple pieces, toasted or un-toasted nuts, and raisins, mixing until you’ve got them evenly distributed throughout the batter.

Alright, from here’s we will get ready to bake. Get yourself a baking sheet and top it with some parchment paper, and spoon out your batter.

Bake these bad boys at 350 for 12-20 minutes (when they set). Take them out and do everything in your willpower to not eat these fresh out of the oven.

Do what you can to let them cool and enjoy your mini gluten free apple pie cookie or all 12 that it makes. I don’t blame you if you eat the whole batch in one sitting.
